Greek Village Salad (Horiatiki)

Cucumbers, tomatoes, red onion, green peppers, and a thick slab of feta crowned with oregano and our signature olive oil.

The steps.

    Arrange the tomato wedges, cucumber, red onion and green pepper in a wide, shallow bowl — not a tall one. The surface area matters.

    Season with salt and a small grind of pepper.

  3. 03

    Scatter the olives over the vegetables, then lay the whole slab of feta on top — no crumbling.

  4. 04

    Drizzle the olive oil and red wine vinegar over everything.

    Crown the feta with a shower of dried oregano.

  6. 06

    Serve immediately, with warm pita and a glass of something cold. Every forkful should include a bit of juice from the bottom of the bowl.

Chef's Tips

Small details, big difference.

  • Authentic horiatiki never contains lettuce. Trust the formula.
  • The pool of tomato-and-oil juice at the bottom of the bowl is the best part — don't waste it.
